Cheese L5 Starter Technician

Operates entire starter room. This includes but is not limited to powder blinding, HHST, Recon, activity test, inoculation/incubation through use at vats, and maintains a superior hygiene.

 

Essential Functions

  • Responsible for smooth production of starter production, COP, and CIP processes.
  • Ensures smooth flow of production by verifying motor and pump operation, correct product flow from Starter vessel to cheese vats, run-time specifications, and completion of production log sheets.
  • Ensure designated readings and samples are taken at required intervals and recorded to maintain proper pH levels, solids, temperature ranges according to specifications.  Notifies supervisor if any readings are out of the acceptable specified ranges.
  • Maintains culture room.  Insures all cultures are put away in a timely manner to prevent damages to cultures.  Insures that FIFO is being followed.
  • Performs CIP by ensuring machine is shut-down properly, changing flow board jumpers to CIP settings, performing machine change over to CIP on computer, completing the CIP log, performing chemical testing, and verifying completion and effectiveness.
  • Responsible for timely and accurate reports of process loss turned in daily to the supervisor for recording of the product wasted.
  • Keeps record in accordance with good manufacturing process and local and state laws.
  • Utilizes GPS processes, driving zero losses and upholds the culture of Southwest Cheese non-negotiables.
  • Each employee shall comply with occupational safety and health standards and all rules, regulations, and orders issued pursuant to the Occupational Safety and Health  Act which are applicable to his/her own actions and conduct.
  • Complies with all applicable food safety regulations and mandates. (Food Safety Modernization Act- FSMA, Safe Quality Foods, Food and Drug Admin, Pasteurized Milk Ordinance)

Qualifications

  • High school diploma or general education degree (GED) preferred.
  • Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.
  • Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.
  • Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.
  • Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
  • Provide leadership to others through example and sharing of knowledge/skill        Ability to prioritize tasks and handle multiple projects simultaneously.
  • Ability to exercise sound judgment and decision-making ability without oversight / approval.
  • Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
  • Proficient personal computer skills including electronic mail, record keeping, routine database activity, word processing, spreadsheet, graphics, etc.
  • Comply with all safety policies, practices and procedures. Report all unsafe activities to supervisor and/or Human Resources
  • Participate in proactive team efforts to achieve departmental and company goals.

Physical Demands

  • Regularly involves sitting, talking or listening and the use of hands and fingers.

  • Frequently involves reaching with hands and arms and stooping or kneeling.

Physical Requirements

  • Must be able to lift and carry items weighing up to 25 pounds.
  • Manual dexterity sufficient to reach/handle items, and works with the fingers.
  • Involves sedentary physical activity performing non-strenuous daily activities of a primarily administrative nature.
  • Should be able to ability to identify and distinguish colors and focus on objects and see at 20 inches or less.

 

 

Typical Environmental Conditions

  • May be exposed to moderate noise levels (i.e. office equipment or light traffic).

 

Travel Requirements

    • Minimal overnight travel (up to 10%) by land and/or air.
