JOB SUMMARY

 

This position is a bakery research scientist working in the Glanbia bakery lab to support a variety of collaborative and innovation projects in the bakery business.  People in this position will perform new applications development, new ingredient product development, process enhancement and technical support for internal groups and external customers.

 

ESSENTIAL FUNCTIONS

 

Responsibilities:

  • New product development of bakery ingredient solutions utilizing specialty grains, dairy and plant-based proteins, dough conditioners, mold inhibitors, enzyme solutions, gluten-free and egg-free systems, etc.
  • New product development of bakery applications including cakes, donuts, muffins, breads, tortillas, cookies, crackers.
  • Research and review scientific literature and patents to design potential bakery solutions.
  • Plan and design robust experiments that can be statistically analyzed and stand up under scientific scrutiny.
  • Write reports in a clear, concise, and meaningful way including interpretation of results and scientific data.
  • Work with suppliers and contract manufactures as needed in developing processes and new ingredients.
  • Develop presentations trainings to present at conferences, meetings, trade shows, and customer visits.
  • Take applications and bakery ingredient formulations from bench-top to pilot scale production.
  • Provide technical assistance and support on customer-based projects.
  • Interface with R&D, quality, and business development teams for commercialization of projects within the realm of responsibility.
  • Provide technical support to scale up commercial and collaborative opportunities at external plants.
  • Write internal specifications and application sheets.
  • Operate equipment in our pilot plant creating a more efficient R&D operation.

QUALIFICATIONS

 

  • Master's degree with 1-3 years related experience; OR Bachelor’s degree with 3-5 years related experience and/or training.
  • Ability to read, analyze, and interpret common scientific and technical journals, financial reports, and legal documents.
  • Ability to respond to common inquiries or complaints from customers, regulatory agencies, or members of the business community.
  • Ability to write speeches and articles for publication that conforms to prescribed style and format.
  • Ability to effectively present information to sales, marketing, and business development teams.
  • Proficient personal computer skills including electronic mail, record keeping, nutrition database activity, formulation software, word processing, PowerPoint, spreadsheets, graphics, etc.              
  • Ability to apply fractions, percentages, ratios, and proportions to practical situations. 
  • Ability to apply basic algebra and geometry to practical situations.
  • Must have ability to deal with Excel equations formulas and graphs.
  • Must be able to handle multiple projects.
  • Ability to use and learn how to operate laboratory instruments including texture analyzer, pH meter, moisture analyzer, balances, water activity meter, Farinograph, Rheometer, Bostwick, PK Blender, mill.
  • Must have acumen for bakery and food processing.

 

TYPICAL PHYSICAL ACTIVITY

 

Physical Requirements:

  • Must be able to lift and carry items weighing up to 50 pounds.
  • Manual dexterity sufficient to reach/handle items, work with the fingers, and perceive attributes of objects and materials.
  • Involves light physical activity performing non-strenuous daily activities of a productive/technical nature.

Typical Environmental Conditions

 

  • May be exposed to moderate noise levels (i.e. office equipment, light traffic).
  • May be exposed to humidity, intense heat, and toxic chemicals.
  • May work in areas with mechanical moving parts.

 

TRAVEL REQUIREMENTS

  • Limited overnight travel (15%) by land and/or air.
