Role Profile

We are hiring for a skilled R&D Pastry/Patisserie chef at Glanbia Ireland’s Innovation Centre in Kilkenny reporting to the R&D Manager for the fresh Soup & Desserts category. This role would be best suited to a highly skilled & creative pastry chef who is seeking to move into a R&D role within a corporate structure. A passion for creativity, innovation and a flair for Patisserie & food ingredients is essential.

 

 

 Pastry/Bakery:

  • Prepare and execute creative product presentations & live demonstrations for key stakeholders, customers and colleagues representing a good understanding of Glanbia Irelands product portfolio and manufacturing capabilities.
  • Development of concepts/ products/ Ingredient end uses across the Glanbia Consumer foods portfolio with a heavy emphasis on high end desserts/ bakery & also some savoury applications
  • Bulk bench sample proto type productions for marketing/trade shoes/customer visits
  • Establish product recipe databanks for R&D marketing collateral to be used for communications within the media, photoshoots, webinars, social media etc.
  • Any other task as requested by the fresh soup & desserts R&D manager

 

Savoury:

  • Assist in the tasks related to each stage of the new product development process – from concept development to product launch.
  • Document research findings in the designated computer databases
  • Bench and Pilot scale trials on site and off site.
  • Up-scaling developed products in a factory environment.
  • Sourcing of ingredients and ingredient specifications from suppliers
  • Completing product specifications
  • Facilitate internal & external shelf-life/analytical sampling, customer sampling sessions
  • Conduct research for the improvement of existing products, both from a technical and a cost perspective.
  • Ensure that good laboratory/kitchen practices and lab protocols are adhered to
  • Communicating with other functions within the organisation and external suppliers
  • Any other task as requested by the fresh soup & desserts R&D manager

 

Required Qualifications & Experience

  • Minimum of 3-5 years spent working in high end 5* pastry kitchen or above
  • Ideally, a 3rd level qualification in Food Technology/Science or a related subject.
  • A logical, structured, scientific approach combined with good record keeping.
  • Experience working on the development of food products in a multi-disciplined team environment in the manufacturing/catering industry will be an advantage but not essential.
  • A keen interest in health and wellness in a diet/lifestyle context.
  • Good Project Management and Presentation Skills
  • Be flexible and adaptable
  • Excellent communication and influencing skills
  • Be computer literate
  • Full driving licence
